Egg Chilly Fry
A proper Kerala fry — egg tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 4 servings
- 3 nos Eggs
- 1 nos Onion finely chopped, big
- 2 nos Green chillies — chopped
- 1/4 tsp Turmeric powder
- Salt, to taste
- 2 tbsp Oil
- Coriander leaves — for garnishing
Preparation
Step 1
Heat the oil in a frying pan.
Step 2
Add the chopped onions and fry for 2 minutes.
Step 3
Add the chopped chillies, turmeric powder and salt and fry for another minute.
Step 4
Spread this evenly on the frying pan.
Step 5
Break the eggs one by one on top of this onion masala. Do not break the yolks as it looks unattractive.
Step 6
Cover the pan and cook this on low heat, till the yolks are cooked.
Step 7
Garnish with chopped coriander leaves.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
