Egg - Cheera Thoran
Finely chopped egg stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 500 g Spinach (Cheera)
- 4 nos Eggs
- 2 nos Onion — finely chopped
- 1 tsp Mustard seeds
- 2 tsp Oil
- 1 sprig Curry leaves
- 2 nos Red chillies (Kollamulaku)
- 2 nos Green chillies
- 1/2 tsp Chilly powder
- 1/4 tsp Turmeric powder
- 1/2 cup Coconut — grated
- Salt, to taste
- 1/2 cup Water
Preparation
Step 1
Wash the spinach and cut into small pieces.
Step 2
The spinach packets can be used.
Step 3
Set a pan over medium heat and pour in the oil or a kadai.
Step 4
Let the mustard seeds crackle.
Step 5
Add red chillies, green chillies, curry leaves and onions and sauté, till onions turn light brown.
Step 6
Add the spinach, turmeric powder, chilly powder, salt and water.
Step 7
Cook till the spinach is done.
Step 8
Add the eggs and scramble it well.
Step 9
Once the eggs are cooked, add the coarsely ground coconut and cook for about 5 minutes on medium heat.
Step 10
Serve while still hot with rice or chappathis.
Step 11
You can add a pinch of cumin seeds(jeerakam) and a small pod of garlic while grindig coconut into a coarse form.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
