Egg Burji With Green Gram And Spinach
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 2 servings
- 1 cup Sprouted green gram cheru payaru
- 1 cup Spinach — chopped (Cheera)
- 2 nos Eggs beaten
- Pepper powder, to taste
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Pour oil in a pan and heat the oil. Stir in sprouted cheru payaru and sautT for sometime.
Step 2
Add chopped spinach and cook well.
Step 3
Cover with a lid and cook in low heat till done. Stir in between.
Step 4
Stir in beaten eggs, pepper and required salt.
Step 5
Stir in low heat and make a scramble.
Step 6
Egg burji with green gram and spinach is ready. Serve hot with chappatis.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
