Egg Burgi Recipe
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 2 servings
- 3 nos Eggs beaten
- 1 medium Ginger — finely chopped
- 3 nos Green chillies — finely chopped
- 1 nos Onion medium — finely chopped
- 3 tsp Coriander powder
- 1/2 tsp Turmeric powder
- 2 tbsp Oil
- 1 tsp Pepper powder
- Salt, to taste
Preparation
Step 1
Beat well the eggs with pepper and salt.
Step 2
Place a pan on the stove, heat oil and cook onion, ginger & green chillies.
Step 3
When the onion becomes brown, add coriander powder, turmeric powder, salt and cook for 1 minute.
Step 4
Add beaten egg and stir frequently till the egg become scrambled.
Step 5
Serve while still hot with bread.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
