Egg Britoms
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 4 servings
- 4 nos Boiled eggs
- 2 nos Onion — sliced
- Garlic ginger paste - 1 tsp
- 2 nos Tomato sliced into small pieces
- Coconut oil
- 2 nos Curry leaves
- 1 nos Brinjal — cut into long and thin pieces
- 1 pinch Turmeric powder
- 1/2 tsp Red chilly powder
Preparation
Step 1
Fry sliced onion in coconut oil in a pan till it turns slightly golden brown.
Step 2
Add garlic-ginger paste and sauté.
Step 3
Add curry leaves and sliced tomatoes and fry for 2 - 4 minutes till it is done.
Step 4
Add salt, turmeric powder, red chilly powder and Stir everything together thoroughly.
Step 5
Grind this in the mixie for about 2 minutes.
Step 6
Put this in a bowl.
Step 7
Add salt to brinjal pieces and Stir everything together thoroughly and fry it in coconut oil.
Step 8
Cut boiled egg each into 4 pieces and put in the bowl.
Step 9
Decorate with fried brinjal pieces.
Step 10
Your EGG BRITOMS is ready!
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
