Egg Bread Pudding
Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 3 servings
- Milk : 500 ml (2 ½ glass
- Sugar : 11 tsp
- Bread Slices : 4 nos
- Egg : 3 nos
- Sugar : 3 tsp (or can use caramel
Preparation
Step 1
Add 11 tsp sugar to the milk and boil.
Step 2
When it boils turn off the fire and set aside.
Step 3
Add bread crumbs to this (soak) and Stir everything together thoroughly after 2 minutes.

Beat 3 eggs.
Step 6

Add this to the milk bread Mixture and give it a good stir.
Step 8
Heat 3 tsp sugar for topping.
Step 9

Can also use caramel instead.

Steam cook as shown in the below images.

Let it cook for 30 minutes. Refrigerate and use.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
