Egg And Potato Stir Fry
This Spicy fried potatoes and a classic egg scramble combine to make a healty and tasty breakfast.
Ingredientsfor 4 servings
- 3 large Potato peeled and — cut into small pieces
- 3 Egg
- 1 small Onion
- 3 Finely Green chilly
- 6 Cloves Garlic
- Curry leaves, a few
- 1/2 tsp Turmeric powder
- 11/2 tsp Pepper powder
- Coriander leaves, a few
- 2 tbsp Coconut oil
- Salt Needed
Preparation
Step 1
Set a pan over medium heat and pour in the oil over medium-high heat. Add sliced onion,green chilly and a pinch of salt. cook until onion goes golden brown.
Step 2
Next, add pepper powder, Turmeric powder and cook well.
Step 3
Stir everything together thoroughly and Put the lid on and cook for 6-7 minutes, stirring in between, until potato pieces are cooked completely.
Step 4
Add egg and scramble until done.
Step 5
Add chopped coriander leaves,curry leaves and Serve right away.
Step 6
Egg and potato stir fry is ready.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
