Egg And Peas
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 4 servings
- 4 nos Egg
- 1 nos Onion
- Peas cooked
- 1 nos Tomato — chopped
- Mustard, a few
- Curry leaves, a few
- Ginger — crushed
- 2 nos Garlic cloves — crushed
- 1 nos Green chillies
- Salt, to taste
- 1 tsp Pepper
- 1 tsp Oil
Preparation
Step 1
Warm the oil in a pan, let the mustard seeds crackle, add onion cook well, add ginger, garlic, green chillies,and curry leaves.
Step 2
Add Chopped tomatoes and cooked peas with salt and pepper give it a good stir Add the beaten egg and scramble it.
Step 3
Egg and peas recipe is ready.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
