Easy Vegetable Rice
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 5 servings
- 2 cup Basmati rice
- 1 cup Mixed vegetables carrots,potato,peas,beans,corn
- Ginger garlic paste - 2 tbsp
- 3 nos Cinnamon sticks
- 3 nos Bay leaves
- 1/2 tsp Cloves
- 4 nos Cardomom — crushed
- 1 tbsp Mint leaves
- 1/2 tsp Shajeera
- 1/2 tsp Fennel (Perinjeerakam)
- 2 tbsp Ghee
Preparation
Step 1
Soak cinnamon sticks,cloves,bay leaves and cardomom in water for half an hour.
Step 2
Heat an open pan, add ghee and fry soaked cinnamon/bay leaves/cloves and cardomom.
Step 3
When it starts to crackle, add ginger-garlic paste and fry for 1 minute.
Step 4
Add shajeera, fennel seeds and continue frying.
Step 5
Add mint leaves,mixed vegetables, fry for another minute and turn off the heat.
Step 6
Soak basmati rice in water for half an hour, drain off water and transfer to a greased pan.
Step 7
Transfer the fried vegetable mixture to this pan, add 2 cups water for 1 cup rice.
Step 8
Add required amount salt and cook on medium heat till all the water is absorbed. :-Keep stirring in between to avoid rice from sticking to bottom of the pan.
Step 9
Transfer cooked vegetable rice to an open tray and garnish with fried raisins/cashew nuts and coriander leaves before serving.
Step 10
Oven style ------------- 10)Transfer rice and vegetable mixture to greased foil tray or metal tray, cover with aluminium foil and bake at 400F for 1 hour.
Step 11
You can also cook the same in pressure cooker or rice cooker.

Easy Vegetable Rice is ready! :- Serve the Easy Vegetable Rice with raita, lime pickle/chicken curry!
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
