Easy & Tasty Fish Curry
A deeply satisfying easy & tasty fish curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 4 servings
- 1 kg Fish
- 5 tbsp Coconut powder
- Ginger garlic paste - 2 tsp
- 2 tsp Chilly powder
- 1/2 tsp Coriander powder
- 1 tsp Turmeric powder
- 3 - small Onions (Kunjulli)
- Curry leaves A, a few
- 1 nos Tomato big
- 4 - Kokum star Kodampuli
- 1/2 tsp Fenugreek seeds (Uluva)
- Coconut oil
Preparation
Step 1
Grind together coconut powder, ginger & garlic paste, chilly powder, coriander powder, turmeric powder, small onions and curry leaves.
Step 2
Warm the oil in a pan or a kadai.
Step 3
Add fenugreek seeds and when it becomes brown, add tomatoes & cook it, stirring well.
Step 4
Put the masala into it & sauté.
Step 5
Add water, kokum star, salt, curry leaves and fish.
Step 6
Cook well.
Step 7
Serve while still hot with rice or chappathis.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
