Easy Potato Curry Easy
A traditional Kerala curry where potato simmers gently in a spiced coconut gravy until every piece soaks up the flavours. The curry leaves and raw coconut oil finish add that characteristic Kerala fragrance.
Ingredientsfor 4 servings
- 250 g Potato
- 2 nos Onion
- 5 nos Green chillies
- 2 nos Tomato
- 1/2 tsp Turmeric powder
- 2 tbsp Coconut oil
- Salt, to taste
- Curry leaves, to taste
Preparation
Step 1
Cut potatos,onion tomato andgreenchillis into small pices.
Step 2
Boil the above ingrediants along with turmeric powder and salt.
Step 3
Once it is boiled mash the potatoes, add water, curry leaves and boil it again.
Step 4
When it boils, pour coconut oil and remove it from fire.
Tip
For a thicker gravy, cook uncovered on medium heat for the last few minutes. For a thinner consistency, add a splash of warm water.
