Easy Onion Murukku
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 5 servings
- 1 cup Bengal gram dal Kadala mavu
- 2 cup All purpose flour Maida
- 1/2 cup Shallots (Kunjulli)
- 3/4 cup Coconut — grated
- 1/2 tsp Asafoetida powder (Kayam)
- 1 tsp Chilly powder
- 1/2 tsp Cumin seeds (Jeerakam)
- 1/2 Dsp Sesame seeds Ellu
- 1/2 tsp Turmeric powder
- Oil — for frying
- Salt, to taste
Preparation
Step 1
For preparing onion murukku, first tie kadala mavu and maida loosely in a piece of cloth.
Step 2
Steam the flour mixture for a few minutes. Remove from fire and sieve it when cool.
Step 3
Grind grated coconut, cumin seeds and shallots together.
Step 4
Add the coconut mixture, asafoetida, chilly powder, turmeric powder and sesame seeds to the sieved flour. Knead with enough salted water to make a smooth dough.
Step 5
Using a presser, press the murukku into heated oil and fry in hot oil until crisp.
Step 6
Easy onion murukku, an evening time snack is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
