Easy Mutton Curry With Thick Gravy is a beloved dish that transcends regional boundaries, finding a place in the hearts of food enthusiasts worldwide.
Ingredientsfor 4 servings
- 1 kg Mutton — chopped
- 3 nos Onion(Medium — cut into thin slices
- 2 nos Tomato(Small — cut into thin slices
- 1 inch Ginger Chopped (Garlic - — optional
- 1 tbsp Chilly powder
- 1 tsp Turmeric powder
- 4 nos Shallots — sliced (Kunjulli)
- 1 tbsp Ghee/Coconut Oil
- Coriander leaves Few — chopped
- 2 cup Water
- Salt, to taste
- 1 cup Coconut — grated
- 1 tbsp Chilly powder
- 2 tbsp Coriander powder
- 1/2 tsp Fennel seeds (Perumjeerakam)
- 1/2 tsp Cumin seeds (Jeerakam)
- 1 tbsp Pepper corns
- 5 nos Cloves (Grambu)
- Pieces Cinnamon Karuvapatta, a few
- 1 tbsp Ghee
- 1 tsp Mustard seeds
- 4 nos Shallots — sliced
- Curry leaves A sprig
- Coriander leaves, a few
Preparation
Step 1
Chop mutton into bite sized pieces. Wash well and drain. Add mutton pieces to a pressure cooker.
Step 2
Put the ingredients one by one - onion, tomato, ginger, chilly powder and required salt into the cooker. Stir everything together thoroughly and Let it cook for 25 minutes. If the meat is tough, it may take longer time to cook. Set aside.
Step 3
Heat 1 tsp oil in a pan. Add 1 cup grated coconut.
Step 4
Fry till it becomes brown.
Step 5
Reduce heat and stir in 1 tbsp chilly powder followed by 2 tbsp coriander powder.
Step 6
Add 1/2 tsp fennel seeds or perumjeerakam. Keep stirring.
Step 7
Add 1/2 tsp cumin seeds and 1 tbsp pepper corns.
Step 8
Add 5 cloves(Grambu) followed by few small pieces of cinnamon. Roast it until a nice aroma comes.
Step 9
Grind the roasted masala mixture without adding water. Add this ground mixture into the cooked mutton. Stir everything together thoroughly and cook in medium flame until the gravy thickens.
Step 10
Meanwhile, take a pan and heat 1 tbsp ghee. let the mustard seeds crackle.
Step 11
Add 4 sliced shallots and fry.
Step 12
Add curry leaves and brown it.
Step 13
Pour the seasoning into the thick mutton gravy which is on low heat. Add some coriander leaves. Stir everything together thoroughly and switch off.
Step 14
The thick mutton gravy with rice or paratha.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
