Easy Mushroom Thoran
Simple, honest, and on every Kerala lunch plate — mushroom thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 4 servings
- 50 g Nadan mushroom
- 1 cup Coconut — grated
- 3 nos Green chillies — slit
- 10 nos Shallots — chopped (kunjulli)
- Curry leaves, a few
- 1 tsp Turmeric powder
- Salt, to taste
- Coconut oil, to taste
- 1 tsp Mustard seeds
- 3 nos Dry red chillies
Preparation
Step 1
For preparing easy mushroom thoran, first mix coconut, green chillies, shallots, curry leaves, turmeric powder, salt and little oil.
Step 2
Stir everything together thoroughly with hand.
Step 3
Heat the oil in pan, let the mustard seeds crackle, add red chillies. Add the coconut mixture and fry for 3 minutes.
Step 4
Add mushrooms and cover it with a lid and cook in low flame.
Step 5
Open lid and fry for another 4 minutes and serve hot.
Step 6
Mushroom thoran, a recipe is ready.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
