Easy Mushroom Masala
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 2 servings
- 1 Pkt Mushroom
- 15 nos Small onion
- 1 tsp Ginger
- 5 nos Garlic
- 2 tsp Coconut pieces
- 1 tsp Coriander powder
- 1 tsp Chilly powder
- 1 tsp Garam masala
- Pepper powder, to taste
- 1 tsp Mustard
- 3 tbsp Oil
- 1/2 tsp Turmeric powder
- Salt, to taste
Preparation
Step 1
Cook the mushroom with salt and keep a side.
Step 2
Heat the pan, pour oil. Add mustard, coconut pieces and fry till golden yellow.
Step 3
Add onion, ginger, garlic and fry.
Step 4
Add all masalas and keep stirring for one minute.
Step 5
Next, add the boiled mushroom and fry.
Step 6
Fry til nice aroma comes. Add curry leaves.
Step 7
Serve it with rice or chappati.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
