Easy Kovakka Ularthiyathu
Kerala-style dry fry where mixed is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 2 servings
- 1 cup Kovakka
- 1 Onion
- 1 tsp Coconut oil
- 1 tsp Salt
- 4 Green chilly
Preparation
Step 1
Wash kovakka and cut into long pieces.
Step 2
Add 1/2 cup water to this kovakka and cook in pressure cooker for 2 minutes,ie 2 whistle.
Step 3
Now kovakka is cooked set aside.
Step 4
Pour oil into a kadai and heat it add onions and cook for a minute.
Step 5
Add cooked kovakkai to this kadai and Let it cook for 2 minutes.
Step 6
Add salt and cook in a medium flame till it is done.Let the remaining water dry completely.
Step 7
Now kovakka ularthiyathu is ready to serve.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
