Easy Kerala Cake
A beginner’s cake that can be easily prepared at home. The fluffy tempting and flavorful cake requires minimal ingredients and time. unique and special with maida flour blended carefully with the listed ingredients.
Ingredientsfor 7 servings
- 3 cup All purpose flour Maida
- 1/2 tsp Baking powder
- 4 nos Eggs
- 11/2 cup Sugar
- 11/2 cup Oil
- 3 tbsp Ghee
- 4 nos Cardamom — powdered (Elakka)
- 1/4 tsp Vanilla essence
- 1/2 tsp Lemon juice
- Salt A pinch
- Cashews — for garnishing
- Raisins(Onakka munthiri — for garnishing
Preparation
Step 1
For preparing Easy Kerala Cake, first beat the eggs using a handheld electric mixer into a large bowl.
Step 2
Add sugar, oil and ghee and mix at the lowest speed again for a few mins.
Step 3
Mix together maida, baking powder and salt.
Step 4
Add this little by little to the bowl and mix at a medium speed for at least 15 minutes.
Step 5
Add essence, lemon juice and cardamom and mix for 1 more min.
Step 6
Preheat oven to 350 degree F.
Step 7
Pour the batter into a greased baking tray.
Step 8
Garnish by putting cashews and raisins neatly over it.
Step 9
Bake in oven for 40 - 45 minutes(or till light brown).
Step 10
Prick with a sharp knife and it should come out clean, if done.
Step 11
Easy Kerala Cake is ready.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
