Easy Drumstick Masala
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 3 servings
- 5 nos Chicken drumstick
- 2 nos Onion
- 2 nos Tomato
- 2 tsp Lime juice
- 5 nos Green chillies
- 1 tbsp Chilly powder
- 1 tsp Turmeric powder
- 2 tsp Cumin powder
- Curry leaves, a few
- 2 tbsp Coconut pieces
- Salt, to taste
- Pepper, to taste
Preparation
Step 1
For preparing easy drumstick masala, make slits on drumsticks.
Step 2
Rub lime juice, salt and turmeric into drumstick.
Step 3
Grind onion, tomato, cumin and chilly powder.
Step 4
Warm the oil in a pan, add drumsticks and fry. Add curry leaves and green chillies.
Step 5
Add the coconut pieces and fry again.
Step 6
Add the ground masala and cook chicken in it.
Step 7
When done, dry roast the chicken.
Step 8
Easy drumstick masala is ready.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
