Easy Chicken Olathiyathu
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 6 servings
- 1 kg Chicken
- 1" piece Ginger — ground
- 1 nos Garlic pod — ground
- 1 tsp Turmeric powder
- 3 tsp Chilly powder
- 3 tsp Coriander powder
- 1 Heaped Garam masala powder
- Salt, to taste
- 2 nos Onion — cut into medium pieces, large
- 2 nos Tomatoes — cut into quarters, medium
- 3 - Coconut oil
- Curry leaves A, a few
- Coriander leaves — for garnishing
Preparation
Step 1
Wash chicken well and cut into medium pieces.
Step 2
Mix together onion, masala powders, ginger paste and garlic paste.
Step 3
Rub the above paste onto the chicken pieces and marinate it atleast for 1 hour. 4)Heat up a pan.
Step 4
Add a cup of water along with salt and tomatoes. Stir everything together thoroughly.
Step 5
Allow it to boil on a medium flame.
Step 6
Give it a stir now and then, cover & cook, till water is absorbed & chicken is done.
Step 7
Heat the oil in a non-stick pan.
Step 8
Add curry leaves and sauté.
Step 9
Add chicken pieces and gently toss around.
Step 10
Cook, till the pieces turn brown and all the water is dried up.
Step 11
Garnish with curry leaves and coriander leaves.
Step 12
Serve while still hot.
Step 13
You can add more oil, if necessary. Salt can be added along with the masalas too.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
