Easy Cauliflower Ularthiyathu
Slow-roasted in coconut oil with a generous hand of spices, this mixed fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 4 servings
- 1 nos Cauliflower
- 1 nos Onion
- 3 nos Green chillies
- 2 nos Dry red chillies
- 1/2 tsp Mustard seeds
- 1/4 tsp Turmeric powder
- Curry leaves, a few
- Salt, to taste
- 1 tsp Oil
Preparation
Step 1
Wash,clean and cut the cauliflower into florets Chop onion and cut the green chillies.
Step 2
Heat the oil in a tawa, let the mustard seeds crackle, add dry red chillies, add turmeric powder in a low flame.
Step 3
First mix Cauliflower florets, choped onion and green chillies with your hand, then add this mixture to the tawa, add salt Add curry leaves, cover it with a lid and allow it to cook.
Step 4
Serve while still hot with rice.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
