Easy Cauliflower Fry
Pan-fried until the edges go dark and crispy, this mixed fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 2 servings
- 1 nos Cauliflower washed and — cut into small florets
- 2 pinch Mustard seeds
- 3 nos Green chillies
- Ginger garlic paste - 2 tsp
- Curry leaves — optional
- 1/2 tsp Tumeric powder
- 1 To Aniseeds Aniseeds should not be too much as it can change the taste of the entire dish (Perinjeerakam)
- 2 To Oil
- Salt, to taste
Preparation
Step 1
In a shallow pan, pour little water and cook the cauliflower along with turmeric powder for about 10 minutes.
Step 2
Heat the oil in a frying pan.
Step 3
Let the mustard seeds crackle.
Step 4
Add green chillies and ginger-garlic paste.
Step 5
Stir for a minute.
Step 6
Add onions and sauté, till they turn brown.
Step 7
Add the cooked cauliflower.
Step 8
Stir for about 5 minutes.
Step 9
Add powdered aniseeds and salt.
Step 10
Cover it.
Step 11
Goes well with rice.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
