Easy Cabbage Thoran
Finely chopped cabbage stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 3 servings
- 1 cup Cabbage — finely chopped
- 5 nos Small onions (Kunjulli)
- 3 nos Garlic pods
- 1 tsp Ginger — chopped
- 2 nos Green chillies
- 1/2 tsp Cumin seeds (Jeerakam)
- 1/4 cup Coconut — grated
- Salt, to taste
- 1/4 tsp Turmeric powder
- 1 tsp Mustard seeds
- 1 tsp Black gram (Uzhunnuparippu)
- 1 tbsp Curry leaves — chopped
- 2 nos Dry red chillies broken (Kollamulaku)
- 1 tbsp Coconut oil
Preparation
Step 1
Heat the oil in a frying pan.
Step 2
Let the mustard seeds crackle.
Step 3
Add black gram and allow it to become brown.
Step 4
Add dry red chillies and curry leaves.
Step 5
Add cabbage and Stir everything together thoroughly.
Step 6
Put the lid on and cook for about 5 minutes on a low flame.
Step 7
Crush together coconut, small onions, ginger, green chillies, garlic, turmeric powder, cumin seeds and salt.
Step 8
Add the above mix into the cooked cabbage and Stir everything together thoroughly.
Step 9
Cook for another 5 minutes on a very low flame.
Step 10
Serve as a side dish with rice.
Step 11
Don`t use water while preparing. :- Prepare on a low flame in a non stick pan.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
