Easy Brinjal Curry
Brinjal curry is a nutritional recipe. Brinjal provides protection to arteries from cholesterol damage and is a good source of pottasium.
Ingredientsfor 4 servings
- 250 g Brinjal round variety
- 1/2 cup Coconut — grated
- Ginger a small piece — thinly sliced
- 1/4 cup Peanuts fried and skinned, Kappalandi
- 1/2 Dsp Poppy seeds Kashakasha
- 1 Dsp Sesame seeds Ellu
- 1/2 Dsp Chilly powder
- 1/4 tsp Turmeric powder
- 1/2 cup Onion — thinly sliced
- 1/2 cup Tomato chopped into pieces
- 2 nos Green chillies — slit
- Tamarind add water and collect the extract (Puli)
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing brinjal curry, first slit the brinjal into 4 pieces and put in salted water.
Step 2
Heat a little oil in a pan and fry sesame seeds and poppy seeds.
Step 3
Add ginger and grated coconut. Fry for a while till the coconut becomes brown. 4)Add fried peanuts and chilly powder to the coconut mixture before removing the pan from flame.
Step 4
Add turmeric powder and required salt. Grind the fried ingredients to a fine paste.
Step 5
Get half of the ground paste and coat the brinjal pieces. Set aside.
Step 6
Heat some oil in a pan and fry the sliced onions. Add the tomato pieces and cook for a few seconds.
Step 7
Add the remaining ground mixture, brinjal pieces and green chillies. Stir everything together thoroughly and cook for sometime.
Step 8
Add 1 cup of water and boil. Reduce the heat and let the brinjal curry simmer.
Step 9
When the brinjal pieces are done, add tamarind extract and required salt.
Step 10
Boil the brinjal curry and remove from fire.
Step 11
Easy brinjal curry is ready and serve hot.
Tip
For a thicker gravy, cook uncovered on medium heat for the last few minutes. For a thinner consistency, add a splash of warm water.
