Easy Bitter Gourd (Pavakka) Thoran
Finely chopped bitter_gourd stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 1 nos Bittergourd Pavakka
- 2 nos Green chillies
- ½ Of Coconut
- Curry leaves A few sprigs
- Shallots A, a few
- Salt, to taste
- Oil
- 1 tsp Mustard seeds
- 3 nos Dry red chillies – 2
Preparation
Step 1
1)Using grater, grate the bitter gourd. 2)Combine together grated pavakka, coconut, finely chopped green chillies and shallots, curry leaves and salt with your hands or spoon. 3)Heat the oil in a thick bottom vessel. 4)let the mustard seeds crackle and cook red chillies. 5)Add the pavakka mixture into it and cover with a lid. 6)Let it cook for 5 minutes. 7)Remove the lid and give it a good stir again. 8)Cook again for 10 minutes on low heat, till done.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
