Easy Beetroot Wine
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 4 servings
- 3 kg Beetroot — grated
- 6 litre Water
- 3 kg Sugar
- 4 Lemon Lemon juice
- 5 nos Cinnamon (Karugapatta)
- 6 nos Cloves (Grambu)
- 2 tsp Yeast
Preparation
Step 1
For preparing easy beetroot wine, mix yeast and 2 tsp sugar in luke warm water.
Step 2
Boil water and let it cool.
Step 3
In a jar, mix the yeast, sugar, lemon juice, sugar, cinnamon, cloves, water and beetroot.
Step 4
Cover it tight.
Step 5
Stir after 1 day.
Step 6
Filter it after 2 weeks.
Step 7
Serve it after 12 days.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
