Easy Beetroot Pickle
A tangy, spicy condiment that keeps for weeks and adds a sharp kick to any Kerala meal. Made with care and stored in a clean jar, this pickle gets better as the days pass and the flavours meld together.
Ingredientsfor 4 servings
- 2 nos Beetroot medium
- 4 nos Garlic pods
- 3 Or Green chilly
- 1/4 cup Vinegar
- Salt, to taste
Preparation
Step 1
Cut beetroot into fine cubes.
Step 2
Add chopped garlic and green chillies.
Step 3
Add vinegar and salt.
Step 4
Store in a jar.
Step 5
Goes well with Chappathi or poori after one day.
Step 6
This pickle can be made with carrots also.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
