Easy And Spicy Vendakka Fry
Slow-roasted in coconut oil with a generous hand of spices, this okra fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 2 servings
- 4 nos Lady's finger
- 11/2 tsp Red chilly powder
- 1/4 tsp Turmeric powder
- Salt, to taste
- Garam masala A pinch
- Oil, to taste
Preparation
Step 1
Cut the vendakka into small pieces.
Step 2
Mix it with chilly powder, turmeric powder, garam masala and salt to taste.
Step 3
Heat a little oil in a pan.
Step 4
Fry the marinated vendakka pieces in it.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
