Easy Achinga Thoran
Finely chopped mixed stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 5 servings
- 1 kg Long Beans
- Turmeric a pinch
- 1/2 tbsp Chilli powder
- 4-5 nos Small Onion (kunjulli)
- 3-4 nos Curry leaves
- Salt as rqrd
Preparation
Step 1
Pour oil into a pan and heat it.
Step 2
Add onions.curry leaves and salt and stir for 2mins.
Step 3
Add turmeric and chilli powder and give it a good stir.
Step 4
Add the beans immediately after mixing the ingredients well.
Step 5
Cook till the beans are soft and done. Serve Hot.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
