Easy Aapam Batter
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 2 servings
- 1 cup White rice of any kind I usually use idli rice. You can use ponni, sona masoori etc
- 1/2 Of Coconut — grated
- 1 cup Boiled red rice
- Salt Asc reqd
- 1 tbsp Sugar — optional
Preparation
Step 1
For prepapring Easy Aapam Batter Soak the white rice overnight.
Step 2
Add soaked white rice, grated coconut and boiled red rice one by one and enough water and grind it well in a grinder (I usually prefer grinder than mixie, because when done in grinder the batter will be really soft).
Step 3
Once done, add sugar and salt and keep it for at least 8-9 hours preferably in a hot place, near to your kitchen hot plate.
Step 4
You can notice that without even adding yeast or baking soda, the batter will become fluffy.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
