Dry Prawns Fry
Pan-fried until the edges go dark and crispy, this prawn fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 2 servings
- 100 g Dry prawns
- 20 nos Small onions (Kunjulli)
- 1 tsp Pepper powder
- 1 tsp Chilly powder
- 1 Stem Curry leaves
- Salt, to taste
- 1 tbsp Coconut oil
Preparation
Step 1
Wash and clean the dry prawns.
Step 2
Strain the water.
Step 3
Fry in a pan for few minutes till it becomes golden brown.
Step 4
Do not add oil.
Step 5
Make a paste of pepper powder, chilly powder and salt.
Step 6
Add the fried prawns to this, Stir everything together thoroughly and set aside for about 10 minutes.
Step 7
Cut the onions into thin pieces.
Step 8
Warm the oil in a pan or a kadai.
Step 9
Cook the onions.
Step 10
Add curry leaves and prawns to this.
Step 11
Put the lid on and cook for about 2 minutes on low heat.
Step 12
Remove the lid and again fry for few more minutes.
Step 13
Do not add too much of oil.
Step 14
Once the prawns and the masala are mixed and fried well, take it off the heat. Serve hot.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
