Dry Mushrooms
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 1 Pack Sliced Mushrooms
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- 1 nos Onion
- 4 tsp Coriander powder
- 4 tsp Masala powder
- 2 tsp Chilly powder
- 1 tsp Salt
- 2 tsp Bread crumbs
Preparation
Step 1
Wash mushroom in warm water.
Step 2
Set a pan over medium heat and pour in the oil.
Step 3
Add ginger and garlic paste and stir, till brown.
Step 4
Add chopped onions and stir, till onion is cooked.
Step 5
Add coriander powder and masala powder and stir, till the smell of masala powder comes out.
Step 6
Add mushrooms and chilly powder.
Step 7
Cover the pan with a lid and cook on a low fame, till mushroom is cooked.
Step 8
Secret to cooking mushroom well is that you should not cook mushroom in water. Mushroom, itself has lot of fluid which comes out, when heated up and hence it shall get cooked in its own fluid.
Step 9
Add salt and Stir everything together thoroughly.
Step 10
Add little bread crumbs and give it a good stir, till all the fluid is absorbed by bread crumbs.
Step 11
Serve while still hot.

*Get sliced mushrooms from any US grocery store.
Tip
Good shallots are the backbone of Kerala cooking. They should be small, pink-purple, and strong-smelling. Large onions can substitute, but the flavour will be different.
