Drumstick Thoran - Kerala Dish
A classic Kerala thoran where drumstick meets freshly grated coconut in a quick, dry stir-fry. Mustard seeds crackle in coconut oil, curry leaves crisp up, and the whole thing comes together in minutes.
Ingredientsfor 3 servings
- Drum stick : 6 medium size
- Coconut : 1 cup
- Green chilli : 2 small
- Turmeric powder : ¼ tsp
- Curry leaves, a few
- Onion : 2 nos
- Salt, to taste
- Oil — for tempering
- Mustard seeds : ½ tsp
- 6 nos Curry leaves : 5
- Red chilli : 2 broken
Preparation
Step 1
Slit the drumstick and remove the inside flesh part with the spoon and cut in to the small piece.
Step 2
Grind coconut, green chilli, small onion, curry leaves and turmeric powder with little water.
Step 3
Set a pan over medium heat and pour in the oil add mustard seeds after allow to crackle add broken red chilli, curry leaves and small chopped onion.
Step 4
Stir and add grated coconut.
Step 5
Stir in chopped drumstick flesh and salt.
Step 6
Stir, cover and Let it cook for 5 minutes in low flame.
Step 7
Remove into a serving plate serve with rice or chappathi.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
