Drumstick Leaves Stir Fry/Muringayila Thoran - Muringayila Thoran is an Kerala style stir fry which is highly nutritious. It is rich in iron,protein and vitamins which goes well with rice and moru curry.
Ingredientsfor 4 servings
- 5 Cup (Muringayila)
- 1/2 tsp Mustard seed
- 2 Tbs Oil
- Salt, to taste
- For coconut masala
- 1 Cup,grated Coconut
- 1 Clove Garlic
- 2 Green chilly
- 1/2 tsp Cumin seed
- Curry leaves little
Preparation
Step 1
Wash the muringayila/drumstick leaves under running water.
Step 2
Grind coconut,green chilly,garlic,cumin seed and curry leaves without water into a coarse paste.
Step 3
Set a pan over medium heat and pour in the oil and allow to crackle mustard seed in it.
Step 4
Add the cleaned and dried muringayila/drumstick leaves.
Step 5
Add salt and cook for a couple of minute.
Step 6
Add coconut mixture.
Step 7
Fold everything together gently and cook it again for 5 minutes in low flame.
Step 8
Muringayila thoran/drumstick leaves stir fry is ready to serve.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
