Diamond Shape Fried Snack
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 6 servings
- Maida powder : 2 cups
- Cumin seeds : 1 tsp
- Red chilli powder : 2 tsp
- Salt, to taste
- Oil : as reqd to fry the snack
- Egg : 1 no
Preparation
Step 1
Make a dough with the ingredients, maida, egg (before mixing the egg with maida powder please blender it well) salt, red chilli powder and cumin seeds as shown below and set aside this dough for 10 - 15 minutes.
Step 2
Divide the dough into equal portions, roughly the size of a normal orange, roll it between your palms, applying a gentle pressure, till the balls are smooth and without cracks.
Step 3
Make such balls as many as you can with the dough.
Step 4
Then spread the balls in any shape (because we have to cut them into small pieces).
Step 5
If required, lightly coat the maida powder on both sides to prevent the dough from sticking as you roll the chapathi / poori.
Step 6
Cut the spread dough in diamond shape and keep it separately.
Step 7

Boil the oil in a pan fry and then put the cut pieces of the dough into it and allow to cook it well.
Step 9
When the layers turn into golden colour, take it out from the frying pan and keep it in an air tight tin.
Step 10
This snack can be served with evening coffee / tea or fruit juices etc.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
