Diabetic Friendly Ragi Puttu
Steamed layers of rice flour and coconut inside a cylindrical mould — puttu is Kerala morning fuel. It crumbles apart on the plate and soaks up kadala curry, banana, or just a spoonful of sugar and ghee.
Ingredientsfor 2 servings
- 2 cup Ragi powder
- Coconut, as needed — grated
- Salt, to taste
- Little Water
Preparation
Step 1
In a roomy mixing bowl, and add ragi powder.
Step 2
Add salt as needed.
Step 3
Stir in in water slowly and Stir everything together thoroughly with your hands.
Step 4
This will form into crumbs. The crumbs should not be dry, it should form into a tight ball when you hold it and it should crumble when you drop it.
Step 5
Add grated coconut and Stir everything together thoroughly.
Step 6
Place a banana leaf in a steamer and add the mixture into it.
Step 7
Steam Let it cook for 15 minutes.
Step 8
And healthy Diabetic Friendly Ragi Puttu is ready.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
