Delicious Vegetable Kuruma
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 2 servings
- 1 nos Carrot chopped small
- 7 nos Beans chopped small
- 1 nos Potato
- 1 nos Onion — chopped
- 1/4 cup Green peas
- 2 nos Green chillies — chopped
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- 6 nos Cashew nuts
- 1/2 tsp Turmeric powder
- 1/2 tsp Coriander powder
- 1/2 tsp Garam masala
- 1 cup Coconut milk
- Coriander leaves — chopped
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing delicious vegetable kuruma, boil the potato and remove skin and cut into small pieces.
Step 2
Place a pan on the stove and add carrot, beans and green peas with required salt and water. Half cook the veggies.
Step 3
Add the potato and Stir everything together thoroughly.
Step 4
In another pan, heat oil and add onion and green chillies. cook, stirring often, for a few minutes.
Step 5
Next, add in ginger-garlic paste, turmeric powder, coriander powder and garam masala.
Step 6
After it cools, grind the mixture with cashew nuts till it becomes a smooth paste and add it to the vegetables. Stir everything together thoroughly and allow to let it bubble for 5 minutes.
Step 7
Then pour in the coconut milk. When it boils, add in the coriander leaves and turn off the heat.
Step 8
Delicious vegetable kuruma is ready. Serve with appam or chappathi.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
