Delicious Rava Kesari
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 1/2 cup Semolina Rava
- 2 tbsp Ghee
- 1 cup Water
- Food colour A pinch, yellow
- 1 tbsp Cashew nuts split
- 1 tbsp Almond nuts peeled and — chopped
- 10 nos Raisins Unakka munthiri
- 1/2 cup Sugar
- 1 tbsp Milk
- 1 tsp Cardamom powder (Elakka)
Preparation
Step 1
Fry cashew nuts, almonds and raisins in ghee(Always add raisin in last, otherwise when cashew and almonds become brown, raisin will burned out).
Step 2
Add rava in same pan and roast till the raw smell disappears.
Step 3
Add sugar in rava and Stir everything together thoroughly. Add 1 cup of boiled water and milk(mix the color in the milk). Mix it well without lumps and cook well in low flame.
Step 4
Add cardamom powder. Transfer it to a greased pan and allow it to cool.
Step 5
When it cools completely, transfer it to a serving bowl.
Step 6
NB:- Heat the almonds in bowl with little bit water in microwave oven(750 watts, 30 secs). We can easily peel the skin.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
