Delicious Fish Fry(Meen)
Pan-fried until the edges go dark and crispy, this fish fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 6 servings
- 1 kg Fish
- 2 tbsp Chilli powder
- 1/2 tbsp Turmeric powder
- 1 tbsp Coriander powder
- 1" piece Ginger
- 5 nos Garlic pods
- 3 nos Green chillies
- Salt, to taste
- Oil — for deep frying
Preparation
Step 1
Grind well the powders, salt, ginger, garlic and chillies together to form a smooth paste adding some water.
Step 2
Add the paste to the cleaned fish pieces and marinate well.
Step 3
Keep it in fridge for 2 to 3 hours so that the masala gets mixed with the fish very well.
Step 4
Get oil in a frying pan and add the fish pieces to it.
Step 5
Fry each side for 5 - 6 minutes.
Step 6
Fish fry is ready.
Step 7
Remember to add the fish pieces to the frying pan only after the oil is pretty hot. Also close the pan with the lid during frying. Be careful not to burn the fish fry.
Step 8
The same method can be used for frying chicken pieces also.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
