Dates Pickle
A tangy, spicy condiment that keeps for weeks and adds a sharp kick to any Kerala meal. Made with care and stored in a clean jar, this pickle gets better as the days pass and the flavours meld together.
Ingredientsfor 10 servings
- 10 To Fresh dates increase or decrease as per sweetness
- 3 nos Green chilies
- 1 piece Ginger
- 1 bunch Curry leaves
- 1/2 tsp Pepper powder
- 1 tbsp Red chili powder
- 1/2 tsp Fenugreek powder (Uluva)
- 1/2 tsp Asafoetida powder Kaayam
- 4 nos Garlic pods
- 50 g Oil
- 1 tbsp Sugar
- Salt, to taste
Preparation
Step 1
Set a pan over medium heat and pour in the oil.
Step 2
Add green chillies, ginger and curry leaves and fry for a while.
Step 3
Add dates, curry leaves, red chilli powder, pepper powder, fenugreek powder, asafoetida powder and garlic cloves and cook for about 5 minutes.
Step 4
Take it off the heat. after it boils.
Step 5
Add salt and sugar.
Step 6
Allow the above mixture to cool.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
