Dates And Badam Payasam
The kind of payasam that appears at every Sadya and disappears first from the banana leaf. Slow-reduced milk, a touch of sweetness, and the warmth of cardamom — simple in concept, extraordinary in taste.
Ingredientsfor 4 servings
- 1/2 kg Dates seedless
- 1/2 kg Badam peeled, roasted & — ground
- 1/2 kg Jaggery sharkara
- 1/2 litre Milk
- Dry fruits, to taste
Preparation
Step 1
For preparing dates and badam payasam, cook dates in pressure cooker till 3 whistles.
Step 2
Grind it in mixer.
Step 3
Melt jaggery and pour it to the ground dates mixture.
Step 4
Heat dates mixture for 10 minutes.
Step 5
Pour milk and boil again.
Step 6
Add the badam Stir everything together thoroughly. Add fried dry fruits and take it off the heat.
Step 7
Garnish with badam and sliced dates. Serve hot.
Tip
The payasam will thicken significantly as it cools. Stop cooking when it is still slightly thinner than your target consistency.
