Cucumber Dal Curry
It's my daughter's favourite curry that goes well with steamed rice.It's a very simple,easy and protein rich curry that requires minimum amount of oil.Cucumber dal curry requires little amount of coconut and that gives it a nice flavour.
Ingredientsfor 4 servings
- 1 Cucumber
- 3/4 cup Tur Dal
- 1 cup Coconut
- 1/2 tsp Turmeric powder
- 1/4 tsp Red chilli powder
- Salt, to taste
- Water, to taste
- For seasoning
- 1/2 tsp Mustard
- 2 tbsp Coconut oil
- Curry leaves, a few
- 3 Shallots — chopped
Preparation
Step 1
Wash dal and cucumber.
Step 2
Get a pressure cooker add washed dal and chopped cucumber. Add some turmeric powder,red chilli powder,salt and water as needed.
Step 3
Let it go for 3-4 whistle.
Step 4
Grind coconut with little water and adding to the curry.
Step 5
Stir everything together thoroughly,when it starts boil,take it off the heat.
Step 6
Set a pan over medium heat and pour in the oil and allow to crackle mustard seed.add chopped shallots and curry leaves.when it turns lightly browned,turn off the heat.
Step 7
Mix it with the curry.
Step 8
Cucumber Dal Curry is ready.
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
