Crispy Potato
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- Potato : 2 nos
- Egg : 1 no
- Bread crumbs : 1 cup
- Pepper powder : ½ tsp
- Salt, to taste
- Oil — for frying
Preparation
Step 1
Peel the potatoes and cut them in length.
Step 2
Half cook the potatoes with salt and a pinch of pepper powder.
Step 3
Break the egg and add one pinch of pepper powder and salt and mix them well.
Step 4
Stir each cooked potatoes in the egg mixture and then in bread crumbs.
Step 5
5) Fry each potato in oil.
Step 6
Serve them with tomato sauce.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
