Crispy Finger Chicken
A robust chicken preparation where the meat absorbs a pounding of Kerala spices and slow-cooked onions. The curry leaves and coconut oil make it unmistakably from this part of the world.
Ingredientsfor 3 servings
- Oats. 1 cup or more
- Chicken breast. 2 pieces
- Green chilly. 5
- Spring onion 1 bunch
- Cornflour 1 cup
- Egg 1
- Red chilly powder 2 tsp
- Cumin seeds 1 tsp
- Pepper powder. 2 tsp
- Salt, to taste
Preparation
Step 1
Mix cornflour,egg water and salt.
Step 2
Mix it well then add sliced spring onion and green chilly and ginger.
Step 3
Give it a good stir.
Step 4
Add chilly powder and cumin seeds.
Step 5
Meanwhile cook chicken using salt and pepper powder.
Step 6
We need only half cooked chicken (it should be sliced in rectangular or finger shaped).
Step 7
Then drain off water.
Step 8
Then pour this chicken to the cornflour mix.and mix it well.
Step 9
Then take oats and cover the cornflour mixed chicken with oats.
Step 10
Heat a pan with oil and add the chicken to it.
Step 11
When both sides becomes brawn and crispy.
Step 12
Get it out and wipe off excess oil.
Step 13
Our crispy finger chicken is ready.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
