Crispy Chicken Cutlet | Kerala Style Tasty Chicken Cutlet

Ingredientsfor 18 servings
- 750 g Chicken
- 1 tsp Pepper powder
- 2 nos Potato Medium
- 2 medium Big Onion — finely chopped
- 1 nos Ginger
- 1 nos Garlic clove
- 5 nos Green chillies
- 1 cup Bread crumbs
- Oil — for frying
- 1 tsp Pepper powder
- Coriander leaves One hand full
- 2 nos Egg white
- 1 tbsp Corn flour
- 1/2 tsp Turmeric powder
- Salt, to taste
Preparation
Step 1
Marinate the chicken pieces in pepper and salt and then fry it in oil.
Step 2
When the chicken is cooled completely, discard the bones. Either pulse it in a blender or chop it finely or shred.
Step 3
Heat 2 tbsp oil in a pan and add crushed ginger garlic and green chilly. stir for a few seconds.
Step 4
Next, add onion and cook until it goes golden brown.
Step 5
Add shredded chicken, turmeric powder, pepper powder and salt to taste.
Step 6
Add boiled and mashed potatoes and coriander leaves.
Step 7
Mix everything well.
Step 8
Knead the the mixture very well until it comes together. Make small balls and flatten it slightly to a smooth disk shape.
Step 9
Beat egg white and corn flour very well and then dip the cutlets in it.
Step 10
Immediately add it to the bowl of bread crumbs and coat it well. Repeat the process of dipping all the cutlets in the egg mixture and then in the bread crumbs.
Step 11
Warm the oil in a pan and fry the cutlets in medium flame until golden brown.
Step 12
Serve delicious hot cutlets with tomato ketchup!
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
