Crispy Brinjal
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- Brinjal : 3 nos
- Ginger garlic paste : 1 tsp
- Chilly powder : 1 tsp
- Chicken masala : 1 ½ tsp
- Flour : 2 tsp
- Turmeric : ½ tsp
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Cut the brinjal into inch pieces in round shape.
Step 2
Mix together all the ingredients in a bowl and make smooth paste.3) Add the brinjal in it and leave for ½ an hour for marination. 4 ) Keep in refrigerator for well coating.
Step 3
Pour little oil in kadai and fry the brinjal by batches.
Step 4
Serve while still hot the cripsy brinjal fry.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
