Creamy Vegetable
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 8 servings
- 1 nos Potato
- 2 nos Carrot
- 10 - Beans
- 1/2 cup Cabbage — chopped
- 1/4 cup Green peas
- 1 nos Onion big
- 5 nos Garlic pods
- 11/2 inch Ginger
- 2 nos Green chillies
- 3/4 cup Coconut — grated
- 2 large Curd
- 3 - Cashewnuts
- Oil, to taste
- Salt, to taste
- 1/4 tsp Cumin powder
- 1 tsp Coriander powder
- 1 tsp Pepper powder
- 1 tsp Turmeric powder
- 1/2 inch Cinnamon (Karugapatta)
- 2 nos Cardamoms (Elakka)
- 2 nos Cloves (Grambu)
Preparation
Step 1
Cut the vegetables and steam it with little salt for about 5 minutes Set aside.
Step 2
Ground the spices to a fine powder and grind it with garlic, ginger and green chillies.
Step 3
Make a fine paste of grated coconut, cashew and curd.
Step 4
Cook sliced onion in little oil till golden brown and then add the masala and sauté.
Step 5
Add the steamed veg and Stir everything together thoroughly.
Step 6
Add a cup of boiled water or veg stock to this mixture.
Step 7
Add the coconut and curd mixture and bring to a boil.
Step 8
Take it off the heat. Serve hot.
