Coconut Rice Ready Within 15 Minutes
Kerala-style flavoured rice — each grain separate, gently spiced, and cooked until it is just tender. A squeeze of lime and a handful of fried cashews finish it off.
Ingredientsfor 2 servings
- Raw rice : 1 cup
- Coconut : ½ cup — grated
- Black gram : 2 tsp
- 3 tsp Bengal gram : 2
- Green chilli (sliced) : 2 nos
- Mustard seeds : 1 tsp
- Curry leaves : 1 stem
- Coriander leaves (chopped, to taste
- Cashew nuts : 5 pieces
- Salt, to taste
- 3 tsp Refined / Coconut oil : 2
Preparation
Step 1
Cook the raw rice in medium flame and remove the water from it and set aside for some time to cool.
Step 2
Heat the oil in a frying pan and add the mustard seeds and allow to burst them.
Step 3
Next, add black gram, bengal gram, cashew nuts, grated coconut and sliced green chilli and stir the Stir everything together thoroughly.
Step 4
After 2 - 3 minutes, add the curry leaves also and stir it further.
Step 5
When the colour of the mix turns into golden, add the cooked rice and required quantity of salt and stir it well.
Step 6
Coconut rice is ready and can be served with coconut chutney / pickles.
Step 7
This is a very Food and can be prepared very easily.
Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
