Coconut Rice
White fragrant rice with the flavour of roasted coconut, aromatic pulses and ground sesame seeds.
Ingredientsfor 2 servings
- 1 cup Long grain Rice washed and — drained
- 1/2 Coconut Coconut — grated
- 2 tbsp Sesame seeds dry roasted and ground, Ellu
- 2 nos Green chillies chopped fine
- 1 tbsp Cashew nuts broken
- 1 tsp Mustard seeds
- 1 nos Dry red chilly split into two
- 1/2 tsp Asafoetida powder (Kayam)
- 1 tsp Bengal gram dal Kadala parippu
- 1 tsp Black gram dal parippu (Uzhunnu)
- 1 sprig Curry leaves
- Ghee and oil — for cooking
Preparation
Step 1
Cook rice in a pot and set aside.
Step 2
Pour oil into a pan and heat it, add the nuts and fry till golden. Remove and set aside.
Step 3
Add all the ingredients for tempering: mustard seeds, dry red chillies, asafoetida powder, bengal gram dal, black gram dal and sufficient curry leaves.
Step 4
When the frying smell comes, add green chillies and grated coconut. Stir fry till the coconut is golden brown.
Step 5
Transfer the coconut mix to the rice. Add salt and mix till well combined.
Step 6
Check for seasoning. Serve with yogurt or pachadi.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
