Coconut Pudding
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 6 servings
- 2 cup Coconut milk
- 3 cup Water
- 150 g Gelatin
- 1 small Condensed milk
- 3 tbsp Sugar
- Cashews — for garnishing
Preparation
Step 1
Get 2 cups of milk in a pan.
Step 2
Mix the coconut milk with condensed milk and sugar.
Step 3
Get 3 cups of water in a sauce pan and place it on fire.
Step 4
Add gelatin and boil well, until the foam comes and all the gelatin grains dissolves.
Step 5
Add the stirred gelatin to the mixture of coconut milk.
Step 6
Pour the mixture into a flat bottom container.
Step 7
Garnish with cashews on top.
Step 8
Allow it to cool, till it thickens.
Step 9
Slice the pudding into desired shape and serve.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
