Coconut Masala Bread Toast
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 3 servings
- Bread slices : 6 nos
- Onion : ½ of 1 (chopped
- Green chillies : 2 nos
- Ginger : 1 tsp (chopped
- Coconut : 2 tsp (grated
- Flour : ¾ cup
- Turmeric : ½ tsp
- Coriander powder : 1 tsp
- Salt, to taste
- Water, to taste
Preparation
Step 1
First powder coconut, ginger and green chillies(do not add water).
Step 2
In a bowl, mix onion, coconut mixture, turmeric, coriander, salt and gram flour.
Step 3
Add half cup water and mix it well. It should be semi thick consistency.4)Dip the bread slices in it and toast it in a tawa.
Step 4
Add oil in on sides, turn and fry both sides.
Step 5
The masala should be well coated in the bread.
Step 6
Serve while still hot with a cup of tea.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
